"I'm a doer," said Jay Parkinson in the backyard of his Williamsburg studio last week. The yard was long and thin with a fruitful peach tree in the far corner—sprawling by New York standards. Mr. Parkinson, a physician-turned-health-care-start-up-founder who's repeatedly been dubbed "the Hipster Doctor," lives in a place that seems to reaffirm his commitment to doing: His bike hangs prominently in the living room, below a taxidermy skunk he claims was hunted by his grandfather. "I've been working on it for years," he said of the apartment, turning on year-round string-lights for effect. "I like to entertain."
